Recipe: Basil and Avocado Pasta

Hi friends!  YAY for the weekend!

I wanted to share with you one of my very favorite dishes these days, Basil and Avocado Pasta.  I could eat this stuff for every meal. It is so easy to make, and is absolutely delicious. I found THIS version over at Oh She Glows, which is a Vegan Blog.  I, however, am NOT vegan, so I adapted it a bit.   


What you need:
1. Linguini Pasta - however much you need for your family
2. 2 medium sized avocados, pitted
3. Fresh Basil leaves, to taste - I use about a 1/4 of a cup
4. 1/2 Lemon, juiced
5. 1-2 Garlic cloves, to taste
6. 2 tbsp extra virgin olive oil
7. Freshly ground black pepper, to taste
8. Shredded chicken
9. Grape tomatoes

What you do:
1. Prepare your noodles as normal
2. Take the avocado, EVOO, garlic, basil leaves, and  lemon juice and  into a blender on medium (or food processor). 
3. Drain noodles and put them in a large mixing bowl
4. Pour avocado concoction over noodles and toss.  Coat the noodles completely.
5. Add shredded chicken and grape tomatoes
6. Garnish with additional basil leaves
7. ENJOY


I've seen some variations on Pinterest that include pine nuts.  I don't care for them, but I am sure it would be a great addition.  

This meal takes a total of fifteen minutes to make.  It is really easy and delicious.  Hope you enjoy! Hope you have a fantastic weekend, friends!  Talk soon!

I've been following Oh She Glows for a while, her recies are good, but a little TOO vegan for me. Good idea to doctor it up a bit!!
