NOT an artist

I consider myself to be a tad bit crafty. With that being said, I am NO painter.

This past weekend I attended a Sips and Strokes class (get your mind out of the gutter, it's a painting class) with a large group of girlfriends.

At Sips and Strokes you are allowed to sip on your favorite libations while the instructor teaches you how to paint a "masterpiece" step-by-step.  I use the word "masterpiece" lightly.


Our class was tasked with painting Dandelions in a windstorm.


At least we tried.


 My "skilled" work... I can't even tell they are dandelions. HA!

We had a blast!  The whole class was about two hours along and there were lots of giggles shared and memories made.  I don't know for sure where my artwork will go, but it might be displayed proudly... in the closet.

We are thinking of maybe trying a pottery class next!  Have you ever done one of these before?

Husband of the Year

My husband totally wins Hubs of the Year.

I think you will agree with me. 


Why yes, that is a big red bow on the top of that pretty car!  He surprised me with this beauty this week.  I was shocked... BEYOND shocked.  

My first thought: OMG!!!
My second thought: WHAT DID YOU DO?!?


I am in love... with the car and him :)



He told me this is my Valentines, birthday (April), and anniversary (also April) gift.  WOO HOO!  Yeah, he is good to me.  We've been having so much fun driving it around town and learning all the new features.  

Prior to this car, I was driving a 2004 Ford Explorer. It was a great car... IN IT'S DAY.  I am loving how technologically advanced this thing is in comparison.  The seat warmers are.my.fave.  My buns are nice and toasted every morning. 

It's definitely smaller than my old Explorer, but it's a welcomed change. I am loving the savings so far on gas mileage - and let me just tell you, this thing will GO!  I told Kev that I might get in trouble in this car... it will go so fast without your even realizing it! HA!

I am so grateful to God for such a good man. He works very hard and then turns around and does this. So sweet. 

Yep.  Husband of the Year!

Uncle David the Miracle Man

mir·a·cle  (ˈmirikəl)

Noun: surprising and welcome event that is not explicable by natural or scientific laws and is considered to be divine.


Have you ever seen a miracle?  I have.




















On Wednesday, January 2nd, I got a phone call from my cousin Adam.  He was at the hospital with our Uncle David (my mother's brother).  He was in ICU and wasn't doing well.  The outlook didn't look good.  We were needed at the hospital.

I immediately called my sister, Brittney, and told her what limited information I had learned.  We headed to the hospital.

My mother, Aunt Robyn, and Mema were all very sick with the flu.  They couldn't go to the hospital.

When we arrived, we found Adam and his brother, Michael, in the waiting room.  We were told that Uncle David was not doing well at all.  In fact kidneys and liver were in failure... and his bad heart had caused him to code twice.  He was hooked up to several machines just to keep him alive, and was unconscious.  They weren't sure he would make it.

He was in a coma for almost two weeks. 




Seeing this pic of my Grandmother by his side broke my heart.



Then a miracle happened.

He started getting better... quickly. His organs were starting to work on their own.  A few days later, he came out of his coma and was able to say a few words!  A few days after that, he was able to carry on conversations.  He was healing incredibly fast.

A week later, he was able to leave ICU and headed into physical therapy... and just days later he was walking!  The doctors and nurses were completely amazed at his quick and miraculous recovery.  

He came home last week.  The whole ordeal lasted one month. 


Here we are on Saturday night.  All smiles.


... And all giggles.

He is back to his old self!  Laughing, joking, and picking on his sisters.  It's unbelievable to think how much different his life was just a month ago. He still has a ways to go in his recovery, but it baffles me to see the difference. I've seen a miracle.  We've been praising God ever since.

Beet It! Beet It!

Hi friends -

I have to tell you, I have a new obsession... beets.  I recently tried them at a restaurant and was instantly smitten.  Yes, that's the only way to describe my feelings for these veggies... smitten.  

Tonight, I introduced Hubs to my new fave, beet and tomato salad.  

First, I tossed the beets in olive oil and a little salt and pepper. Then I roasted the beets at 400 degrees for 40 minutes.  


Once they are done roasting, I let them cool for a few minutes, then peeled the skin off and cut them into cubes.

I add in a few red and golden cherry tomatoes, onions, olive oil, salt & pepper, and feta cheese.  I cannot describe how delicious I find this salad.  Even hubs was raving over it. 


I served the salad along side some roasted brussel sprouts. These are a recent discovery too.  And yes, I like them charred.  I'll share that recipe later.  I'm pretty much smitten with them as well.
